Description

Bok Choy is great in salads. The stems add a refreshing crunch and the greens have a stronger, hearty flavor that goes well with fruit. Again, you can add your favorites, this recipe is a way to get started.

large Bok Choy (rinsed and chopped)

Red or yellow pepper (sliced)

crimini mushrooms (sliced)

Apple (cored and sliced)

Garbanzo beans (drained and rinsed)

walnuts (chopped)

Instructions

Combine salad ingredients in a large bowl.
Serve with dressing on the side. I prefer a light Italian vinaigrette or Braggs healthy vinaigrette. Annie's Roast Red Pepper or Drew's Thai Sesame Lime dressings are also good options.
