Another wonderful find, refreshing and tasty salad!

Ingredients

Broccoli head (Cut into florets and chopped small, stalks peeled and sliced)

Carrot (diced)

orange pepper ((or any other color))

red onion (finely diced)

Braeburn or Fuji apple (diced)

plain yogurt
3 T
feta cheese (crumbled)
1⁄2
lemon (juice and zest)

Garlic (minced)
 
freshly ground pepper
2 T
Dried Cranberries
3 T
pecans (or walnuts) (toasted and chopped)

Instructions

In a serving bowl, combine the first 4 ingredients.
In a small bowl, mix together the yogurt, feta, lemon juice and zest, garlic and pepper to create a dressing. Taste and adjust ingredients if needed.
Toss dressing with vegetables and sprinkle with cranberries and pecans.
