Description

This is one of my favorite Driftless Market soups. Easy to make, easy to freeze, you can always have a bowl on hand.

Ingredients

3 T
Canola oil
2  
medium onions (peeled and chopped)
1 T
fresh ginger
2  
meduim turnips (peeled and chopped)
1  
large celeriac (peeled and chopped)
2  
medium carrots or parsnips (chopped)
1  
large orange (Zest and juice)
4 c
water
1 t
dried thyme
1 T
Kikkoman soy sauce
3⁄4 c
yogurt ((optional))

Instructions

Heat olive oil in a large stock pot; add onions and ginger and cook 2-3 minutes. Add carrots, turnips, and celeriac and cook for another 2-3 minutes. Add the water, thyme, soy sauce, and orange juice and bring to a boil; cook for 10-15 minutes until the vegetables are soft.

Remove from heat. Blend soup using a stick blender, food processor, blender or, for a chunkier soup, use a potato masher. Return soup to stock pot and add most of the zest leaving some for garnish. Return to boil. Lower the heat and add the yogurt, simmering for 1 minute.

Notes

Serve garnished with the remaining zest.
