Description

A refreshing summer soup; quick and easy.

small zucchini (coarsely chopped)

avocados (peeled, pits removed, coarsely chopped)

medium green onions (coarsely chopped OR)

medium onion (coarsely chopped)

small garlic (peeled and minced)
1⁄2 t
chili powder
1⁄2 t
coriander seeds (crushed)
1 c
plain yogurt
   
salt and freshly ground pepper
1⁄2 c
cilantro

Instructions

Put zucchini, avocados, green onions, garlic, chili powder, and coriander seeds into a food processor and process until smooth.

Transfer the mixture to a medium bowl, stir in the yogurt. Refrigerate for at least one hour. Season with salt and pepper to taste, garnish with cilantro.

Notes

We found this soup to be more like a dip; vegetable guacamole.
