A refreshing summer soup; quick and easy.
Put zucchini, avocados, green onions, garlic, chili powder, and coriander seeds into a food processor and process until smooth.
Transfer the mixture to a medium bowl, stir in the yogurt. Refrigerate for at least one hour. Season with salt and pepper to taste, garnish with cilantro.
We found this soup to be more like a dip; vegetable guacamole.
