A little tradition for St. Patrick's Day.
Place Corned Beef into a 5 quart Dutch oven and cover with water. Add onion and garlic. Heat to boiling, reduce heat and simmer for 1 hour and 40 minutes.
Add carrots, onion wedges, potatoes; cover and simmer 20 minutes.
Remove beef to a platter; keep warm.
Add cabbage to pot; heat to boiling; reduce heat and simmer, about 15 minutes.
