Description

A healthy refreshing fresh summer salad.

1  
large red cabbage
1  
Green Pepper (deseeded and chopped )
1⁄2  
pineapple (cored and chopped)
2  
oranges: navels, cara cara or tangelos (segments cut in half)
1 c
red onion (finely chopped)
3  
Celery (chopped)
1⁄2 c
walnut peices (OR sliced almonds)
1 c
Lentil or sunflower sprouts (optional)
   
DRESSING
1⁄2 c
plain yogurt
1 T
apple cider vinegar
   
Salt and Pepper to taste

Instructions

To use cabbage as a bowl, cut with a sharp knife and scoop out the center of the cabbage, leaving 1/4 inch for the shell.

Take remaining cabbage and chop very fine. In a large bowl, mix all ingredients except walnuts.

Stir in dressing and refrigerate for an hour or overnight.

When ready to serve, stir in walnuts and sprouts.
