A refreshing twist on regular salsa, just right for Summer.

mango (peeled, seeded and diced) 1
cucumber (peeled, seeded and diced) 2
jalapeno peppers (seeded and finely chopped) 1
large onion (finely diced) 1 clv
Garlic (minced) 1⁄4 c
fresh cilantro (chopped) 1 T
lime juiceInstructions
Stir together the first 6 ingredients in a mixing bowl. Season with lime juice, salt and pepper to taste. Refrigerate at least 3 hours before serving to allow flavors to blend.
Notes
Also good with chicken, pork or fish.
