Description

Better than omelets, you can fill up your pan with produce and scramble in the eggs as a binder. All the ingredients, except the eggs, are optional. It depends on what is in the fridge or the garden.

eggs (mixed in a bowl )

olive oil or butter (melted)

green onions (chopped)
1⁄2 lb
greens: kale, spinach, or swiss chard (leaves and stems chopped)
1⁄2 c
mushrooms (sliced)

tomato (chopped)

mini peppers (seeded and chopped)
1 c
brocolli and or cauliflower (chopped)
2 T
parsley (chopped)

Instructions

In a bowl, whisk eggs until well mixed.

In an electric fry pan or large skillet saute onions, peppers, tomatoes and mushrooms in olive oil or butter. Add greens and broccoli and saute until bright green and wilted, 3 to 5 minutes.

Stir in eggs and cook until set, about 5 minutes. Just before serving, stir in parsley. Sprinkle with salt and ground pepper to taste. Serve hot.

Notes

4 to 6 eggs depending on how many other ingredients you have and how large the eggs are.
If you are watching your cholesterol, remove 2 or more yolks.
You can substitute the green onions for 1/2 cup red onion - chopped.
