Hearty Jacob's Cattle Bean stew is a tasty protein power house.
Cover beans with water and soak 6-8 hours. Drain. Transfer to a stockpot and cover with 1-inch of water. Bring to boil then simmer beans for 30 minutes.
Meanwhile, cut Upton's bacon into one-inch pieces. In a separate stockpot, heat 1 Tbsp sunflower oil and add bacon. Cook until crispy, about 3-5 minutes. Reserve bacon pieces on a paper towel.
Add onion, garlic, celery and carrots to the sunflower oil. Sprinkle with 2 teaspoons of the sage and salt. Saute until veggies soften.
Add beans and their juice to the veggie mixture and simmer for 60 minutes, until beans are tender.
Add bacon pieces and fresh ground pepper to taste.
Serve with a tossed green salad and chunky bread.
