A very refreshing twist on a side salad!
1⁄4 cbalsamic vinegar
1⁄4 cvegetable oil
1 1⁄2 twhite sugar
1⁄2 tground black pepper
12 ozcherry tomatoes (OR chop up regular tomatoes)
2green onions (sliced)
1⁄2 cbasil (chopped)
Whisk together the balsamic vinegar, oil, sugar, salt and pepper in a bowl. Add tomatoes, cucumbers, onions, and basil. Toss evenly. Cover and chill in refrigerator at least 3 hours.
