Another good side for beans and rice.
Preheat oven to 350 degrees. Cut squash or pumpkin in half and scoop out the seeds. Put seeds in salted water to soak off flesh.
Place squash halves face down in a baking pan with enough water to cover the bottom. Bake for 30 to 45 minutes or until you can easily put a fork through the skin. Remove from oven and let cool.
Scrape the flesh form the skin. Smash with a potato masher or fork. Serve with salt and pepper.
IF PUMPKIN: Place the pumpkin seeds on a cookie sheet and sprinkle with salt. Bake in a 350 degree oven for 10 minutes. Loosen seeds with spatula then continue baking until seeds start to pop. Cool and enjoy.
When I bake a large pumpkin, I make 1 cup mounds of puree on a cookie sheet. Then I freeze them and package in plastic freezer bags. When I want a cup or two of mashed pumpkin I go to the freezer.
