Bean & Quinoa Salad
In medium pan, combine Quinoa, water, salt and bring to boil. Cover & simmer over low heat until water is evaporated (15 minutes). Spread Quinoa on a baking sheet and refrigerate for 20 minutes. Combine oil, lime juice, cumin, salt & pepper. Set aside combine cooled quinoa, chopped cilantro, red pepper, red onion, rinsed black beans, feta, and dressing (oil mixture) ENJOY!!!!
