Description

This makes a nice side to any bean and rice dish.

Ingredients

1 lb
greens (swiss chard, spinach, kale, collards, lamb's quarters) (Chopped)
1  
small onion (chopped)
2 clv
Garlic (minced)
   
sesame oil

Instructions

Heat oil in a large skillet; add onions and garlic and sauté for 2 to 3 minutes. Add greens and a splash of water. Cover and let cook for 3 to 5 minutes, until greens are wilted.
Serve immediately.

Notes

To jazz this up you can add crimini mushrooms or red peppers with garlic and onions. Then splash organic cider vinegar or cooking sherry gives a mellow rich flavor.
