Description

Made from gluten, seitan is a low-fat, high protein meat substitute.

2 T
sesame oil
2 c
westsoy seitan (diced)
1 c
rutabaga (peeled and cubed)
2 c
Onion (chopped)
2 c
carrots (scrubbed and cut into 1/2 slices)
1 c
potatos (scrubbed and cubed)
1⁄2 c
Celery (chopped)
2  
bay leaves
1 t
rosemary
1 clv
Garlic (minced)
1⁄2 c
parsley (fresh and chopped)
2 c
water
3 T
soy sauce

Instructions

Put first seven ingredients into a large stock pot and saute for 5 minutes. add remaining ingredients and bring to a boil. simmer 10 to 15 minutes, until vegetables are tender.
Run a stick blender through the soup mashing potatoes and rutabagas for thickening.
Serve hot with crusty bread, a green salad and Nathan's Horseradish pickles.

Notes

You can vary this recipe using rutatbags and potatoes or eliminating the potatoes and doubling the rutabagas. All depends on whats in the fridge.
