Made from gluten, seitan is a low-fat, high protein meat substitute.
Put first seven ingredients into a large stock pot and saute for 5 minutes. add remaining ingredients and bring to a boil. simmer 10 to 15 minutes, until vegetables are tender.
Run a stick blender through the soup mashing potatoes and rutabagas for thickening.
Serve hot with crusty bread, a green salad and Nathan's Horseradish pickles.
You can vary this recipe using rutatbags and potatoes or eliminating the potatoes and doubling the rutabagas. All depends on whats in the fridge.
