Ingredients

Avocado (Purre with lime juice ) 2 c
Onion 1 c
Carrot 1 c
Celery 2 c
Bell Pepper 1 c
Cauliflower 2
cucumber 4 c
tomato 10 c
veggie stock 4 c
canned black beans 1⁄2 c
lime juice 2 t
cumin 2 t
paprika 2 T
chili powder 4 t
salt 1 t
pepper 1 bn
cilantroInstructions
*Chop all of the veggies and use the scraps for stock
*Boil veggie scraps in 6-8 cups of water for 10 minutes and then strain
*mix avocado and lime juice together and puree them before adding to the soup
*Rinse the black beans
*In a soup pot, saute the veggies in 3 T of oil on medium heat-add in the tomatoes last
*Add in avocado puree
*Add veggie stock, beans and seasonings
*simmer for 20 minutes
***taste and adjust the seasoning if desired
*Add in chopped cilantro last
