Ingredients

asparagus spears (Cut to same length) 1 bn
fresh garden lettuce (Washed and chilled) 1 bn
fresh radish (washed and trimmed) 1⁄8 c
fresh chives (washed and snipped) 3 T
Salad DressingInstructions
Blanch asparagus spears in boiling salted water for 1 minute. Plunge into ice water to chill. Drain and refrigerate. Snip lettuce into bite size pieces and place on serving plate. Slice radishes, sprinkle on top of lettuce. Lay three spears of chilled asparagus along side lettuce. Drizzle with Salad Dressing and serve.
Notes
Options: Add fresh croutons on top. Use fresh spinach along with the lettuce. For a truly springtime salad, decorate with fresh pansy flowers (edible!).
