Raw bok choy has crunchy ends, mild greens and is loaded with vitamins. Enjoy this as a side or add roasted tofu or chicken for a hearty meal.
Combine bok choy, carrot, cabbage, mango, jalapeno and cilantro in a large bowl. Add lime juice, sweetener, sesame oil and tamari; toss to combine. Garnish with almonds.
