Tart apples bring out the sweetness of the squash and the maple syrup gives a fine fall flavor.
Cut squash in half and remove seeds. Add 1/2 inch water to a baking dish then place squash, cut side down. Microwave on high for 10 minutes or when a fork easily pierces skin.
Scrape squash from the skin and mash in a bowl. Add apple chunks, Maple syrup, sage and a quarter cup water. Cover and microwave again for 5 minutes.
Season with salt and pepper.
